  Truffle is valuable sought after edible fruiting body of a group of subterranean ascomycete fungi of the genus Tuber. The fruiting body of truffles is highly prized as food, their smell has been described as similar to deep-fried sunflower seeds or walnuts. Truffles are held in high esteem in French, northern Italian as well Chinese fine dining cooking. The flavour of black truffles is less pungent and more refined than that of white truffles. When fresh their scent fills a room almost instantly. Majority of the restaurants brush the truffle carefully and shave it or dice it with the skin on so as to use most of this expensive ingredient.

  Cantharellus cibarius, commonly known as the chanterelle or golden chanterelle, is a fungus. It is probably the best known species of the genus Cantharellus, if not the entire family of Cantharellaceae. Scientific research has suggested that the golden chanterelle may have potent insecticidal properties that are harmless against humans and yet protects the mushroom body against insects and other potentially harmful organisms.
The chanterelle is considered to be one of the best wild mushrooms in the world. Almost all variations of it are edible, including the aptly named luminous chanterelle.

  It is an important element of Japanese Cuisine. Tricholoma Matsutake is cool, low in calories and good in taste, so are recommended to those with excessive body heat or obesity. It also help to reduce cholesterol in blood and enhance blood circulation, they are good for arterial sclerosis, heart diseases, diabetes and hyperlipidemia that are caused by decreased physical activities or basic metabolism. It also helps the movements of stomach and intestines and enhances the circulation of energies to treat hands or feet cramps, low energy and cold lower back or knees. Tricholoma Matsutake relatively contains much protein, fiber, vitamin B,and niacin along with much ergosterol like many other mushrooms.
 
  松茸生长在云南海拔1600-3200米的温带寒温带的云南松, 华山松,栎松,杜鹃等 混交密林地上, 每年6-11月为生长期。 功能:该菌菇体肥大,肉质细嫩, 香味浓郁有较高的营养和特殊的药用价值。 据分析, 松茸含水量多, 有粗蛋白,纯蛋白,粗脂肪,可溶性无氮化物,粗纤维,灰分积极维生素B1,B2,C 及维生素PP。 中医认为, 具有强身,益肠胃,止痛, 理气化痰,驱虫等功效。 据现在科学研究表明, 松茸还具有治疗糖尿病,抗癌,防辐射等特殊的作用。 松茸热水提取物对小白鼠肉瘤S-180 及防癌的抑制率分别为91.8%和70%。
 
  Boletus edulis is edible and a polled sample of people consider it superior to most other porcini in flavour and in texture. It is described as nutty and slightly meaty, with a smooth,creamy texture. The mushroom has a distinctive aroma reminiscent of sourdough. It has higher content than other edible mushrooms. When dried, boletus edulis has more protein than all other commonly consumed vegetables apart from soybeans.

  Morchella, the true morels, is a genus of edible mushrooms closely related to anatomically simpler cup fungi. These distinctive mushrooms appear honeycomb-like in that the upper portion is composed of a network of ridges with pits between them.
Morels are a feature of many cuisines, including Chinese cuisine. Their unique flavour is prized by cooks worldwide, with recipes and preparation methods designed to highlight and preserve it. As with most edible fungi, they are best when collected or bought fresh.
Drying is a popular and effective method of long-term storage for morels, and they are readily available commercially in this form; dried morels can be reconstituted by soaking in warm water or milk. They may also be frozen after steaming or frying.
 
  羊肚菌生长在云南海拔1900-3000米左右阔叶林中地上或林园空旷处, 每年春末初夏及秋初为生长期, 外似羊肚, 故名“羊肚菌” 功能: 该菌子实体肉质,稍脆, 香甜可口, 营养丰富,是著名的世界性美味食用菌。 据分析, 人本所需的8中氨基酸在羊肚菌中都有, 还含有碳水化合物, 粗纤维, 硫氨酸, 核黄素, 烟酸及维生素B12。 中医认为, 羊肚菌性平味甘, 有益肠胃, 消化助食和化痰理气之功效, 可用于治疗脾胃虚弱,消化不良, 痰多气短等病症。
